Sweet Potato Black Bean Tacos

These were the cutest most simple tacos, but tasted SO good! Perfect for a light dinner. The recipe makes a lot of tacos, but I ended up making 6 and saved the leftover ingredients.
Ingredients:
- Tortillas (I used Tumaros 9 grain and cut them into smaller circles)
- Black beans (1 can)
- Sweet potatoes (I used 3 medium size)
- Avocado (I used 2)
- Arugula
- Lime juice
- Sea salt
- Seasoning of choice (I used guacomole seasoning)
TO MAKE: For the beans, I drained and cooked them on the stove with lime juice, sea salt, and a bit of seasoning. For the sweet potatoes, I cut and air fried them with a bit of olive oil and sea salt. For the avocado, I smashed them in a bowl with lime juice, sea salt, and seasoning.
TO ASSEMBLE: Start with your tortilla, then add a bit of the avocado, then fresh arugula, the black beans, and then the sweet potato. Feel free to add any sort of sauce you like on top. Enjoy!
